PANERA: OPTIMIZING CAFÉ OPERATIONS THROUGH A NEW MANAGEMENT SYSTEM

Highlight

The system we built was intended to accommodate not only Panera cafes, but other restaurants owned by JAB Holdings as well such as Einstein’s Bros. and Krispy Kreme–so, scalability was critical. That scalability was put to the test late one night when the legacy system we were replacing crashed. At that time, the new system had only been in place a short while, and we had been carefully migrating cafes to the new system 50 at a time.

With the legacy system out of commission, Panera and the TPI team decided to migrate the remaining 1,800 cafes all at once. While we had not planned on this, we had confidence the system would handle the load.

As you can see in the chart on the next page, the line shows response time and the bars show average requests per minute. Notice on the 13th, a large number of users were migrated from the on-premise application to the cloud and response times remained steady as volume grew by over 16x.

The Results

The system we built accomplished Panera’s primary objectives:

  • Scalable to accomodate a variable, fluctuating load.
  • Intuitive UI/UX to make onboarding thousands of associates a seamless experience.
  • Multi-tenent and cobrandable to support multiple brands simultaneously
  • Increased accuracy of sales forecasting, which among other things resulted in saving millions of dollars in food waste and labor costs.
